The viewer list is primarily designed to show that an account viewed the Status. It should not be treated as a detailed record showing every time the person opened the Status.
For example, if you watch someone’s Status several times, that does not necessarily mean the person will see something like “You watched this five times.”
There is also a difference between viewing a Status and interacting with it.
If you reply to a Status, react to it or send a message based on it, the person will obviously know that you interacted with their post. But simply viewing it can already place your account in the viewer information when the relevant privacy settings allow that information to be shared.

They may not have received a message from you or seen you react to the post. They may simply have checked the Status viewer list.
It is also worth remembering that WhatsApp privacy settings can change over time as the platform introduces new features and updates.
If you want more control over who can see your WhatsApp activity, the best approach is to regularly check the application’s Privacy settings rather than relying on assumptions about how Status views work.
